Could anyone tell me how to set my runways at airports to be single direction? ie landing only or take-off only. Currently all my aircraft use a single runway to take off and land which severely reduces capacity and will queue in holding patterns even though there are empty runways on the other side of the airport.

Connect only one taxiway and place one-way sign on that. Simple! :)

As said in the above post, you're missing the icon.
I also used this thread for help once ( http://forum.simutrans.com/index.php?topic=537.0 ), just look at the pics and everything is explained.

Add waypoints between Airport A, Airport A's desired runway, and Airport B. This technique will reduce chance of queue, but any vehicles on the schedule/line will not have the choice of loading/unloading zones @ Airport B.
