Is there a way to get a more complex and diverse industries at the start of the game. Will new industries come up as the game goes along?
For example I only have six different types of factories and consumers at that start of my latest game.

If cities grow to certain levels, there will be new industries.

In the spacial construction toolbar there is a button: 'P+' to change players. If your map set up allows it you can use the button to change players and select a 'public service' player. That has a map edit tool that can add, move, delete industries. You might want to use that as the game is not very good at generating new industries.
