After say, 1970, consists (i.e trains) should be able to transport any good that is "containerisable".  For example, if I have a consist running between stations "A" and "B" where "A" is attached to a dairy and "B" has both a supermarket and a glass factory attached, then how can I carry food (cooled goods) on the forward journey and glass on the return?

Food and glass would have to belong to the same goods category. Categories are constant, so before or after 1970 won't have anything to say.

I've proposed a system that would allow it, but the goods category system is very fundamental to the way many aspects of Simutrans work, so changing it is very complicated. Another problem is that it would suddenly allow new, unexpected and possibly unwanted connections.

OK, understood.

? Could I (as in, is it possible) to borrow and create a wagon pak that would accept both categories i.e. piece goods and/or cooled goods?  (I am lost at the moment without the tikiwiki DAT file pages.)

No, every wagon have only one Freight.

Use old wiki right now: http://simutrans-germany.com/wiki/wiki_5/
This version update needs pages to be imported manually, we are working on this, but this takes lot of time.

Ah well,  ::(

Thanks for that link, I had found it by accident last week, but didn't bookmark it.
